Recipes for Art’s Red Wine Vinegar

If you joined the wine club, you may have been the lucky recipient of a bottle of Art’s Homemade Red Wine Vinegar. It’s powerful stuff created by Graton Ridge co-owner Art Paul out of left over Graton Ridge wines. (I know….LEFT OVER WINE!???) Here are a few recipes to make use of that delicious liquid!

Roasted Red Pepper Vinaigrette

Original recipe makes 6 servings

Ingredients:
3 large red bell peppers
1/2 cup olive oil
1/4 cup Art’s Homemade Red Wine Vinegar
2 tablespoons mayonnaise
2 tablespoons grated Parmesan cheese
3 cloves crushed garlic
1/2 teaspoon dried basil
salt and pepper to taste

Directions: Preheat oven to 450 degrees F (230 degrees C).
Rub peppers with enough oil to coat; place on sheet tray and roast in oven for 25 to 30 minutes or until skins turn black.
Remove from oven and set aside to cool. Remove stems and skins.
Place peppers, oil, vinegar, mayonnaise, cheese, garlic, basil and salt and pepper in blender; Process until smooth. Refrigerate until ready to use.

Marinated Grilled Shrimp

Original recipe makes 6 servings

Ingredients:
3 cloves garlic, minced
1/3 cup olive oil
1/4 cup tomato sauce
2 tablespoons Art’s Homemade Red Wine Vinegarr
2 tablespoons chopped fresh basil
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 pounds fresh shrimp, peeled and deveined
skewers

Directions: In a large bowl, stir together the garlic, olive oil, tomato sauce, and red wine vinegar. Season with basil, salt, and cayenne pepper. Add shrimp to the bowl, and stir until evenly coated. Cover, and refrigerate for 30 minutes to 1 hour, stirring once or twice. Preheat grill for medium heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade. Lightly oil grill grate. Cook shrimp on preheated grill for 2 to 3 minutes per side, or until opaque.

Barbeque Sauce

Ingredients:
1 Jar (12 Oz.) Apricot preserves
1/4 Cup Art’s Homemade Red Wine Vinegar
1 Tsp. Salt
1 Medium Garlic clove, crushed
1/4 Cup Brown sugar
2 Tbsp. Dijon mustard

Directions: In blender, blend all ingredients until smooth. Great for basting chicken and spareribs.

Cinco de Vino – May 5, 2013

Join us in celebration of Cinco de Mayo with delicious wines and NACHOS! Chardonnay, Pinot Noir, Zinfandel, Petite Sirah and two dessert wines are on our tasting menu. The picnic area will also be available to kick back in an Adirondak chair and enjoy a cool breeze under our gigantic sequoia tree while sipping a glass of Russian River Valley wine!

Tartaric Crystals in Wine:
The “Wine Diamonds” of Quality

sediment-in-wine_thumbQUESTION: “We recently opened a bottle of your Chardonnay and it had some little crystals in it. We are wondering if they are dangerous to our health or if this means the wine is no good. What are they?”

ANSWER: We get this question a lot in our tasting room, as we often experience this phenomenon in our Chardonnay. Here is a great article addressing this!

2010 Estate Pinot Noir – $50/Bottle

Well released this beautiful wine for the holidays and it is shaping up nicely! Remember our Estate Pinot Noir is a limited production wine that wins big awards consistently. (Our 2007 Estate Pinot Noir was the Red Sweepstakes winner in 2010 at the SF Chronicle Competition.)

WINE: 2010 PINOT NOIR ESTATE
Paul Family Vineyard, Russian River Valley, Sonoma County

TECH: ½ ton open top fermentation, designer yeast, punch-downs,
40% new French oak, aged 14 months.

Alcohol: 14.5%
Production: 135 Cases

AROMAS: The primary aromas are black cherry, strawberry, toasty oak,
celery salt, cola, rose, Asian spice, maple, honey suckle, rhubarb, dirt, tea, vanilla.

PALETTE:  This wine has good balance, smooth, balanced acidity, medium
weight, lingering toasty, spicy berry

AWARDS:       Gold Medal – Pinot Shootout 2013
