The palette is more tropical, with lingering apricot, mango, mineral and sweet oak. This wine has a heavy weight, due to barrel fermenting, and refreshing acidity. 100% Russian River.

This wine was fermented by a variety of commercial yeast types. It was fermented and aged for 11 months in 30% new French and American oak 59 gallon barrels. The most potent aromas are of pineapple, honeysuckle, peach and smoky sweet oak. There are also notes of juicy fruit gum, mint, brown sugar and lemon cream. The mouth feel is easy to enjoy, due to the barrel fermentation and extended lees contact. Many of the same aroma descriptors come across on the palette, with a lingering sweet, toasty finish. It is a concentrated, heavy weight Chardonnay. 100% Russian River Valley.

The aroma of this wine is clearly that of Pinot Noir. You are initially greeted with black cherries, cola, roses and of course that distinctive earthiness. Upon further analysis there are more subtle aromas like cedar, brown sugar, peach candy, molasses and fresh dill. The use of new oak barrels added a nice spicy, toasty, smoky dimension. The palette of this Pinot Noir is consistent with the aromas. Fresh black cherries and cola up front fade into a lingering smoky, sandalwood aftertaste. It is a medium weight wine with smooth structure and vibrant acidity. 100% Russian River Valley.

This wine was fermented in 1/2 ton open top bins by a variety off commercial yeast types. It was aged in barrels for 18 months, with 40% of the barrels being new Hungarian and American oak. The primary aromas are balck cherry, tea leaf, plum and toasty oak. There are also notes of cinnamon, sage, leather and cedar. The palette of this wine is crafted to be very pleasant. It has a lingering, sweet, spicy berry aftertaste, smooth tannins and nice acidity. It is a medium weight Cabernet by California standards.

This dessert wine was made by stopping the fermentation, at the desired residual sugar, with high proof grape spirits. It was then aged in neutral oak for 18 months. It has very concentrated aromas of strawberry jam, with many other contributors including blackberry syrup, chocolate, clove and black pepper. The palette weight is luxurious with 10% residual sugar. Flavors of sweet blackberry potpourri linger forever.

This wine was made with a blend of several varieties of local apples. It was made like a port wine, killing the fermentation at the desired time with high proof alcohol. It was fermented in stainless steel and aged in neutral oak barrels. The more obvious aromas are ridiculously potent apple and butterscotch with more subtle notes of apricot, spearmint, pineapple and fresh nuts. The mouth feel is like a fine dessert wine, with vibrant acidity, pronounced sweetness and impressive concentration. The rich, apricot / apple finish linger forever.
